Horseradish And Herb Crusted Rib Roast
- Softened unsalted butter (2 sticks)
- Chopped garlic cloves (1 head)
- Horseradish (1 cup)
- Chopped thyme (2 tbsp)
- Chopped rosemary (3 tbsp)
- Chopped sage (3 tbsp)
- Rib roast beef (16 pounds)
- Pepper (freshly ground)
- Salt to taste
Heat oven to 325 degrees. Take a food processor. Add horseradish, rosemary, sage, thyme, garlic and butter to make a paste. Place the roast in a roasting pan. Allow it to stand for a while. Use salt and pepper to season it generously. Now coat it with horseradish-herb butter thoroughly. Bake for 3 ½ hours. Insert a thermometer to ensure the temperature is 125 degrees. Transfer roast from the pan to a board. Allow it to rest for at least 20 minutes before you serve.
- Minced meat (100 grams)
- Chopped and dried cranberries (25 grams)
- Clementine ( zest of 2)
- Brandy or sherry for splash
- Puff pastry (250 grams)
- Filo pastry ( 1 pack)
- Melted butter (50 grams)
- Beaten egg (one)
- Flaked almonds (50 grams)
- Icing sugar
Heat the oven to 200 degrees. Now take a mixing bowl and add minced meat to it. Add dried berries, Clementine and brandy to it. Now take a clean work surface. Roll out a big rectangle of puff pastry. Spread minced meat evenly on it. Make sure you leave some space around the edges. Now roll the pastry in the shape of a Swiss roll and keep in fridge for firming.
Take two trays for cupcake and coat it with melted butter. Now on the tray, add a layer of filo pastry. Place one pastry in each hole. Brush pastries with butter. Place another later of filo pasty and brush with butter again.
Now remove the puff pastry from the fridge and use a sharp knife to cut it into 24 slices. Now place it on a filo-lined hole. Brush with egg and garnish with flaked almonds. Place the tray in oven for 25 minutes. Cook until the pies are golden brown.
Allow the minced pies to cool. Dust with icing sugar before you serve.
